Dreaming of a summer Raspberry Mojito {recipe}



My sister makes THE best Raspberry Mojito I've ever had! I have been meaning to post her recipe for a while now, and this grey and blustery (non) summer weather gave me the time and motivation to get on it! Will be the perfect drink to sip out back tomorrow after a sunny day of working in the yard. Makes a pitcher...and is just as thirst quenching and yummy sans rum! {her kids go nuts for the non alcoholic versions}. Perfect time of year to go pick those berries, and enjoy a refreshing drink! Recipe Below. Raspberry Mojito You will need: - 9 Limes (and a juicer. I found a inexpensive hand press at winners) - 3/4 cup Sugar - 1 1/2 cups of white rum - mint - Raspberries **Juice 9 limes in a pitcher. Add 3/4 cup of sugar, 1 1/2 cups white rum, and mint and most of the raspberries (I save some of the berries to garnish). Mix together. Add ice and fill the rest of the pitcher with club soda. Serve adding a few full berries to each glass. ** When you make too much....Or you want to try something new: pour into an ice cube tray and freeze. Pull out of freezer after frozen and put cubes in blender. Mix with just enough water to blend. ;) Happy Friday! Enjoy ~ xo Lisa.
